Colorful Veggies

So, the last time I posted a bento on this blog was in 2010.  Occasionally I will bring my lunch (or part of my lunch) in bento form, I just haven't been good about photographing and sharing.

So, for the second day back to work, I decided to do a little bento for myself.  I brought an individual sized hummus along too and dipped the veggies in that.

Contents:
  • red pepper
  • broccoli
  • lemon cucumber (from my sister-in-law's garden)
  • black sesame seeds
I am thinking of getting a bigger bento box that would fit all the food I want to take for my lunch.  We shall see...

Happy bento!

Vegan Nachos

I have been eating nachos like they are going out of style lately. We bought another small loaf of Vegan Gourmet cheddar "cheese." It is especially wonderful in dishes like this where the cheese is seasoned by lots of other flavors:

I originally purchased it so that I could have twice baked potatoes with Bryan. More about that later.

But for now, there is nothing wrong with this:

Hope you all are having a restful Thanksgiving surrounded by those you love.

May God truly bless you this holiday season!

The bento formally known as frozen

Bento #39 was hot! (By which I mean I microwaved it right before eating.) And a good thing, too... because it has been really cold in the cafeteria lately at the middle school I work at.

This bento contains:

  • 5 fresh tomatoes picked from my garden this morning (Can I just say again how astonished I am to be picking tomatoes in the morning, and watching it snow in the evening! What a crazy November this is.)
  • A frozen Boca pattie with carrot peelings on top for decoration
  • frozen corn
  • frozen stir-fry vegetables
  • maple chipotle grille sauce (hidden beneath the Boca burger)
I was thinking to myself as I ate my lunch today, that I had packed a bento even my vegan friends could enjoy. Being something of a carnivore myself, I found this worthy of comment.

Thanks for reading!
